Apricot Chicken Apricot ChickenServes: 2-4 Preperation Time: 15 mins What you will need to make this Yummy dish: 4 lean, skinless chicken breasts What to do to make this Yummy dish: Thinly slice the onions and fry in a non-stick fry pan until golden brown. Add the chicken breasts, cook through until ligt brown. Add the thinly sliced capsicums. Mix the soy sauce with the chilli sauce and the apricots and add to the chicken. Prepare a 9" square dish with cooking spray; set aside. In a small bowl, combine flour, sugar, baking powder, and salt; set aside. In a mixing bowl, combine bananas, milk, oil, eggs, and vanilla extract. Add dry ingredients and mix well. Spread batter into prepared pan. Bake for 25 minutes, or until toothpick inserted in center comes out clean. To prepare glaze, combine honey and cinnamon in a small bowl. Mix well. Drizzle over warm cake. Prepare a casserole dish with cooking spray; set aside. Cook ravioli according to package directions; drain and set aside. Meanwhile, in a large skillet, cook chicken and onions until chicken is no longer pink. Add spaghetti sauce, spinach, and salt. Mix well. Spread half the chicken mixture into prepared dish. Arrange ravioli over chicken layer. Spread remaining chicken mixture over ravioli. Bake, covered, for 20 minutes. Uncover, and sprinkle cheese over top.
