Baked Chicken and Ravioli

Apricot Chicken

Serves: 2-4

Preperation Time: 15 mins

What you will need to make this Yummy dish:

4 lean, skinless chicken breasts
3 big onions
1/2 a green capsicum
1/2 a red capsicum
1 200 gram tin of apricots in natuarl juice
2 tablespoons of soy sauce
2 tablespoons of sweet chilli sauce

What to do to make this Yummy dish:

Thinly slice the onions and fry in a non-stick fry pan until golden brown.

Add the chicken breasts, cook through until ligt brown.

Add the thinly sliced capsicums.

Mix the soy sauce with the chilli sauce and the apricots and add to the chicken.

Simmer for one hour on a low heat and serve on a bed of rice or pasta.

Makes 12 servings

2 c unbleached flour 2 tbsps olive oil
1/2 c granulated sugar 2 whole eggs, slightly beaten
1 tbsp baking powder 1 tsp pure vanilla extract
1/4 tsp salt Glaze:
1 c bananas, mashed 1/4 c honey
1/2 c fat-free milk 1/4 tsp cinnamon

Preheat oven to 176 C. Prepare a 9" square dish with cooking spray; set aside. In a small bowl, combine flour, sugar, baking powder, and salt; set aside. In a mixing bowl, combine bananas, milk, oil, eggs, and vanilla extract. Add dry ingredients and mix well. Spread batter into prepared pan. Bake for 25 minutes, or until toothpick inserted in center comes out clean. To prepare glaze, combine honey and cinnamon in a small bowl. Mix well. Drizzle over warm cake.

Makes 8 servings

12 pcs frozen cheese ravioli 340 grams frozen spinach
455 grams ground chicken breast, skinless thawed and squeezed dry
1/2 cup onions, chopped 1/4 tsp salt
740 grams low-fat spaghetti sauce 115 grams low-fat cheddar cheese, shredded

Preheat oven to 176 C. Prepare a casserole dish with cooking spray; set aside. Cook ravioli according to package directions; drain and set aside. Meanwhile, in a large skillet, cook chicken and onions until chicken is no longer pink. Add spaghetti sauce, spinach, and salt. Mix well. Spread half the chicken mixture into prepared dish. Arrange ravioli over chicken layer. Spread remaining chicken mixture over ravioli. Bake, covered, for 20 minutes. Uncover, and sprinkle cheese over top. Bake for five minutes more, or until cheese has melted.
